Peanut Butter Birthday Cake

Mia insisted that the only way to properly celebrate her friend’s birthday was to make an entire cake frosted with peanut butter.

  • 1 c whole wheat or white flour
  • 1 c shredded carrots
  • 1/3 c honey
  • 1/4 c applesauce
  • 1/4 c peanut butter
  • 1/4 c cooking oil
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • Extra peanut butter for frosting
  • Dog treats as toppers

  • Preheat oven to 350 degrees F.
  • Grease a small (8″ x 8″) cake pan.
  • Combine the applesauce, peanut butter, oil, vanilla, and honey in a large bowl; blend well.
  • Stir in the carrots and mix thoroughly.
  • Add the flour and baking soda and mix into the carrot mixture.
  • Spoon cake batter into prepared pan.
  • Bake for 35-40 minutes.
  • Let cake cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.
  • Frost with peanut butter and top with treats.

Note: Use creamy peanut butter for the frosting, and thin with a little milk or applesauce if necessary to make it easier to spread. If the humans would like to enjoy the cake as well, a cream cheese frosting (without the dog treats) is a very nice substitute for/addition to the peanut butter topping.
