Parsley Treats

Mia [somewhat reluctantly] agreed to try a recipe that didn’t involve peanut butter, and was pleasantly surprised by these crunchy parsley treats.


  • 2 cups whole wheat flour (rice flour can be substituted if gluten intolerant)
  • ½ cup flaxseed meal
  • ¼ cup chopped parsley
  • 1 egg
  • ¼ cup unsweetened applesauce
  • ½ cup water


  • Preheat oven to 375 degrees F.
  • In a large bowl, whisk together flour, flaxseed meal, and parsley.
  • In a separate small bowl, lightly beat the egg, then stir in the water and applesauce.
  • Make a well in the flour mixture and pour in the egg mixture; stir until combined.
  • Lightly spray a baking sheet with olive oil.
  • Scoop the desired treat size onto the baking sheet (no larger than 1/4″ thick).
  • Bake for 20 minutes.
  • Turn off the oven and let the treats cool in the oven for a few hours, or even overnight. This will make them nice and crunchy!
