Happy Birthday Pupcakes

Mia made these for her boyfriend Cooper’s birthday last weekend; they were a big hit!

  • 1 3/4 c whole wheat flour
  • 1 c skim milk
  • 1/4 c honey
  • 1/2 c peanut butter for batter, plus 1/4 c for topping
  • 1/4 c vegetable oil
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 2 eggs
  • Dog biscuits (for topping)

  • Preheat oven to 350F.
  • In a bowl, mix all the ingredients until blended; then beat the batter for two minutes.
  • Spoon the batter into muffin cups, three-quarters full.
  • Bake for 18-20 minutes for full size pupcakes, or 12-14 minutes for mini pupcakes.
  • The pupcakes are done when a toothpick inserted in the center comes out clean.
  • Let them cool and then remove from the muffin pan.
  • Spread peanut butter on top of pupcakes, and add a biscuit to each one.
