Apple Cinnamon Drops
Mia is taking a break from the peanut butter this week (not without some grumbling), and thought these apple cinnamon drops would be nice for a leisurely weekend brunch.
Ingredients:
- 5 c brown rice flour
- 2 large eggs
- 1 c applesauce
- 1 c cold water
- ½ c coconut or olive oil
- ½ c powdered milk
- 2 tbs chopped parsley (fresh or dried)
- 1 tsp cinnamon
Instructions:
- Thoroughly mix all ingredients together in a large bowl.
- Refrigerate for at least 1.5 hours (this makes the dough easier to handle).
- When ready to bake, preheat oven to 350 degrees F.
- Pinch off pieces of dough according to the size of the treat you want, and roll into a ball between your hands.
- Put the dough balls on a lightly greased cookie sheet, spaced evenly apart.
- Lightly flour the bottom of a glass and use it to press the dough balls flat (aim for a fairly uniform thickness, about 1/8”).
- Bake for 20-25 minutes.
- Remove from oven and let cool completely on a wire rack; store in an airtight container in the refrigerator.
Note: If you are making smaller treats, use the floured bottom of a shot glass or a plastic scoop (like the type that comes in jars of whey powder or meal replacement shakes) to press the dough flat; this will help keep the edges of the smaller treats from getting too thin.
