Peanut Butter Birthday Cake
Mia insisted that the only way to properly celebrate her friend’s birthday was to make an entire cake frosted with peanut butter.
Ingredients:
- 1 c whole wheat or white flour
- 1 c shredded carrots
- 1/3 c honey
- 1/4 c applesauce
- 1/4 c peanut butter
- 1/4 c cooking oil
- 1 tsp vanilla extract
- 1 tsp baking soda
- Extra peanut butter for frosting
- Dog treats as toppers
Instructions:
- Preheat oven to 350 degrees F.
- Grease a small (8″ x 8″) cake pan.
- Combine the applesauce, peanut butter, oil, vanilla, and honey in a large bowl; blend well.
- Stir in the carrots and mix thoroughly.
- Add the flour and baking soda and mix into the carrot mixture.
- Spoon cake batter into prepared pan.
- Bake for 35-40 minutes.
- Let cake cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.
- Frost with peanut butter and top with treats.
Note: Use creamy peanut butter for the frosting, and thin with a little milk or applesauce if necessary to make it easier to spread. If the humans would like to enjoy the cake as well, a cream cheese frosting (without the dog treats) is a very nice substitute for/addition to the peanut butter topping.
