Salmon Bites
Mia wanted to try something in keeping with this week’s heart-healthy theme, and opted for these tasty salmon bites.
Ingredients:
- 1 -16 oz can of salmon (use liquid, remove bones)
- 2 eggs
- 3 cups dry oats (regular or steel cut)
- 1/2 cup whole wheat flour
Instructions:
- Preheat oven to 350 degrees.
- Mix ingredients until they form a dough (similar to cookie dough in consistency).
- Grease 13×9 baking sheet, and pat the dough on it in an even thickness.
- Use a knife to cut dough into ½ inch pieces.
- Bake for 25 minutes, pull out sheet, and rescore pieces to make sure they don’t stick together.
- Continue baking for another 15 minutes, or until the edges are browned.
Note: This recipe is very fragrant while baking, so keep the fan on or a window open, and expect some company in the kitchen!
